Spicy Naan: Tomato, Kale & Red Pepper Hummus



Hello friends and happy Monday. I hope you all had a wonderful weekend and are as excited to gear up for fall as I am.


It was a beautifully crisp weekend here with temperatures in the 60s.  The great thing about Wyoming is, even though we have some wicked winters, it is sunny over 360 days of the year. That said, even when it is cold it looks beautiful out.


That is exactly how it was this weekend, so I was happily donning my sweatpants and hoodie while helping my husband work on our house.  This summer we put a storage addition on the back and we are now in the final stretch to get the roof finished before the weather gets too dicey.


However, weekends cannot be for work alone and this weekend was a bit special as Sunday was my husband's birthday. A while back he and I were talking about our birthdays as kids and he mentioned when he was young he always wanted, but never had the opportunity, to have a birthday party at an arcade. Well, lo and behold, I pop on Groupon and what is the first thing to pop up? An amazing deal for an all-day pass at Game Works—a mega arcade that is perfect for both children and adults.


So that is how we spent our day yesterday. We made a trip to Denver with a friend, spent the morning at Bass Pro Shops, had lunch at his favorite fast food chain, Del Taco, and then spent all afternoon playing arcade games. It may have been twenty years late, but my husband finally got his arcade birthday.

We ended the evening back at home. I was much too tired to even think about cooking dinner, so we enjoyed pizza and then dug into the Twix ice cream cake I had made. Which, by the way, turned out fantastically. Be on the lookout in the future for a blog post on how I did it!

Now, here it is Monday again, and we are finally getting back on a normal schedule.  That is until my kiddos birthday in a few weeks, but for now, we are settling back into our usual routine.  Which meant today was shopping and meal planning day.  Though I hate having to go spend money, I love having fresh groceries in the fridge and a whole week of healthy and delicious recipes planned out ahead of me.

Because we kind of fell off the health food bandwagon with the craziness and festivities of this weekend, my body has been craving the good nutrition that it has become accustomed to.  So today I decided to nourish my body and my soul with this stupendous Spicy Naan with Tomato, Kale, and Red Pepper Hummus.  And let me tell you, it was amazing.

I am slightly addicted to spicy food. I would gladly do shots of buffalo sauce over tequila any day, and I find even the best recipes can be souped up by adding some heat. But not everyone shares my affinity for the spicy stuff, so I try my best to balance an appropriate amount of spice with flavor. That said, I definitely enjoy anything with roasted red peppers.

For today's mid-morning snack, I whipped up this recipe. It was still warm from the oven and perfectly filling. It also took 5 minutes to make. I hope you enjoy it as much as I did!

What You'll Need:

  • 1 package mini tandoor baked naan  (4 flatbreads)

  • 1 tub of roasted red pepper hummus 

  • 2 Roma tomatoes diced

  • 1/2 cup chopped kale

  • EVOO

  • Crushed red pepper flakes

1. Place each slice of naan in the toaster and toast for about 1 minute, until crisp but not totally brown.

2. While naan is toasting, dice your tomatoes and chop your kale.

3. Once naan is toasted, lightly brush it with EVOO and pop into the oven to broil for 1 minute.

4. Spread your desired amount of hummus on each piece of naan.  I used roughly 1 tbsp.

5. Top with kale and tomatoes.

6. Sprinkle with crushed red pepper flakes.
